Union League Café chef-owner Guillaume Traversaz’s experience in award-winning restaurants in France, England and Australia honed his passions and inspired his philosophy about cooking: focus on quality, inspire teamwork, surpass expectations. A 4th generation chef from France, he shares a history with ULC founder and mentor, Jean Pierre Vuillermet whose parents also ran a hotel/restaurant in the same village! Since 1993, the desire has been to capture the conviviality and old-world charm of a Parisian brasserie combined with a refined seasonal cuisine. Using the freshest local and organic product, their menu blends the best of French classical tradition with a more contemporary approach to flavors, textures and native fresh ingredients. They designed Union League Cafe as a lively, unpressured atmosphere in which to relax and enjoy good food and wine. Their airy terrasse is a happy gathering spot to enjoy a glass of champagne or a simple meal. The hearth fire is always lit to welcome you, your family, and friends.
